The latest patented version of this dewatering system is designed to be especially suitable for water removal from various fresh vegetable and fruit products in the foods industry (e.g. cherry tomatoes, diced tomatoes, snap peas, broccoli florets, strawberries, berries, pieces of fruit, sliced mushrooms, etc.). The dewatering process consists of a combination of blowers (available in various sizes) which draw a vacuum below the mesh belt. A group of adjustable product agitators placed before the plenum slots guarantee optimum product distribution and uniform product depth across the belt. In this specific configuration, air fans (easily opened for cleaning) and ducts also blow air around the products, enhancing the performance of the system and improving efficiency of the dewatering process. This enhanced model is a highly efficient drying system, which can also help to improve shelf-life, enhance finished product quality, and minimize mechanical stress.
